Pasta starts with high raw ingredients of quality, all the semolina are selected with more gluten percentage. This selection guarantee the craftsmanship of pasta.
The mixture of cold water and semolina (passed through bronze draws) allows the right rought, perfect combination with every type of sauce, and over in the pan after cooking.
Then pasta follows one of the most traditional method of drying: almost 50 hours (10 times more than the industrial process).
These procedures allows starch and gluten are better distribuited and uniform all over pasta.
Finally pasta will be selected and packaging, all made by hand.
